Paso Robles Wine Tasting: Eberle Wine Caves

THE GOODS: Members-only perk allows you to sample 6 special wines from the Eberle vault in the unique setting of the wine cave.

This weekend, we visited Paso Robles, a fairly quick 3 hours and change drive from Los Angeles. We specifically were there to pick up the member shipments at Tablas Creek and Eberle and attend a Tablas Creek member tasting party.

While there, we decided to take advantage of one of the member perks at Eberle: the VIP Wine Cave Tasting.  Eberle is one of just 3 wineries in Paso Robles with an underground wine cave.


Built in 1994, the cave winds around 24 feet below the vineyards and the tasting room totaling 16,000 square feet of storage. The temperatures remain at a steady 60-68 degrees, in spite of the hot Paso summers. The caves are currently holding about 2000 barrels of wine, each about 55 gallons… so, by my calculation about 600,000 bottles of wine are comfortably aging or waiting to be shipped at the moment!

Our host for the afternoon, Doug, took us on a quick tour and explained the steps of the winemaking process. We saw the giant harvester and then the large destemming machine then walked past the steel initial fermentation tanks.

Fermentation tanks - flags from past vintages hang from the rafters.From there we descended the steep ramp to the below-ground caves.  It’s delightfully cool and feels only slightly humid.  Along every step of the way you are surrounded by hundreds of barrels of wine!




Eberle rents out the caves for special occasions – that evening there was a wedding scheduled.  It would be cool to get married in a wine cave!



Doug led us to the private tasting area, where he set out cheese pairings to go with the 6 different wines we’d be tasting – including the awesome 2009 Eberle Reserve Estate Cabernet – my favorite!


In all the cave tour plus the tasting took about an hour and a half, after which we headed back up to the delightful Eberle patio and picnic area… where we found winery founder, Gary Eberle himself!

He is a Paso Robles living legend, and a pioneer in the area, having been a winemaker and winery owner here since 1973.  We relaxed in the sun with Gary, learning more about Eberle and his experiences in Paso, playing some cornhole, and drinking some more delicious Eberle wines before eventually getting kicked out when the wedding guests started arriving.
